Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, garlic, and ginger; sauté until onion is translucent.
  3. Stir in turmeric and cumin, cooking for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken, carrots, and celery; simmer for 15 minutes.
  6. Stir in spinach and cook until wilted.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a vegetarian version, substitute chicken with chickpeas.
  • Can be stored in the refrigerator for up to 3 days.
