Ingredients

  • 2 salmon fillets
  • 1 cup of rice
  • 2 cups of bok choy, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • 1 tablespoon sesame seeds
  • Green onions for garnish

Instructions

  1. Cook the rice according to package instructions.
  2. In a small bowl, mix soy sauce, honey, sesame oil, ginger, and garlic to create the glaze.
  3. Heat a skillet over medium heat and add the salmon fillets, skin-side down.
  4. Brush the glaze over the salmon and cook for about 4-5 minutes on each side, or until cooked through.
  5. In another pan, sauté the bok choy in a little oil until wilted.
  6. To serve, place rice in a bowl, top with salmon, bok choy, and sprinkle with sesame seeds and green onions.

Notes

  • For a spicier version, add red pepper flakes to the glaze.
  • Make sure not to overcook the salmon to keep it moist.
  • Feel free to substitute the rice with quinoa for a different texture.
