Ingredients

  • 4 large eggs
  • 4 strips of bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Optional: diced tomatoes, avocado, or hot sauce

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  2. In the same skillet, scramble the eggs, seasoning with salt and pepper.
  3. Once the eggs are cooked, add the shredded cheese and stir until melted.
  4. Lay a tortilla flat and place a portion of the egg and cheese mixture in the center.
  5. Crumble the cooked bacon on top of the egg mixture.
  6. Add any optional toppings if desired.
  7. Fold the sides of the tortilla over the filling and roll it up tightly.
  8. Repeat with the remaining tortillas and filling.
