Bacon breakfast hash is a hearty and flavorful dish that combines crispy bacon, potatoes, and vegetables for a satisfying morning meal.

  • 4 slices of bacon
  • 2 medium potatoes, diced
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 2 eggs (optional)

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
  2. Add the diced potatoes to the skillet and cook until golden brown and tender, about 10-15 minutes.
  3. Add the chopped bell pepper, onion, and garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
  4. Chop the cooked bacon and add it back to the skillet. Stir to combine.
  5. If using, create two wells in the hash and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking.
  6. Season with salt and pepper to taste and serve hot.
