  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 3 cups of corn (fresh or frozen)
  • 2 medium potatoes, diced
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the corn and diced potatoes to the pot, followed by the chicken broth. Bring to a boil.
  5. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Serve hot, garnished with crispy bacon and chopped chives.

  • For a vegetarian version, omit the bacon and use vegetable broth.
