  • 6 strips of bacon, chopped
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy.
  2. Remove the bacon and set aside, leaving the bacon grease in the skillet.
  3. Add the frozen peas and carrots to the skillet and sauté for 2-3 minutes.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  5. Add the cooked rice to the skillet, along with the soy sauce and sesame oil, mixing everything together.
  6. Stir in the cooked bacon and sliced green onions, and season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes until everything is heated through.
