Baked quinoa mac and cheese

A creamy and healthy twist on traditional mac and cheese, made with quinoa for a nutritious boost.

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup milk (or plant-based milk)
  • 1/2 cup Greek yogurt
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the quinoa under cold water and drain.
  3. In a pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, mix cooked quinoa, shredded cheese, milk, Greek yogurt, garlic powder, onion powder, salt, and pepper.
  5. Transfer the mixture to a greased baking dish.
  6. Top with breadcrumbs and drizzle with olive oil.
  7. Bake for 25-30 minutes or until the top is golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add vegetables like spinach or broccoli for extra nutrition.
  • For a vegan version, use plant-based cheese and yogurt.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
