Baked salmon with asparagus and Dijon glaze.

A delicious and healthy baked salmon dish paired with tender asparagus and a tangy Dijon glaze.

Ingredients

  • 4 salmon fillets
  • 1 bunch of asparagus, trimmed
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the Dijon mustard, honey, and olive oil.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Arrange the asparagus around the salmon.
  5. Brush the Dijon glaze over the salmon fillets.
  6. Season with salt and pepper, and place lemon slices on top.
  7. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Serve warm and enjoy!

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the glaze.
  • Make sure not to overcook the salmon to keep it moist.
  • This dish pairs well with a side of quinoa or brown rice.
