  • 4 lbs beef short ribs
  • 2 cups mushrooms, sliced
  • 2 cups carrots, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides.
  4. Remove the ribs and set aside. In the same pot, add onions, garlic, mushrooms, and carrots, sautéing until softened.
  5. Stir in tomato paste, thyme, and rosemary, cooking for another minute.
  6. Pour in the red wine and beef broth, scraping the bottom of the pot to deglaze.
  7. Add the short ribs back into the pot, ensuring they are submerged in the liquid.
  8. Cover and transfer to the oven, braising for 2.5 to 3 hours until the meat is tender.
  9. Remove from the oven and let rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the short ribs overnight.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days.
