Best Beef Enchiladas

Tender beef wrapped in soft tortillas, smothered in rich enchilada sauce and melted cheese. A classic Mexican dish that’s hearty and flavorful.

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • 8 flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped cilantro
  • 1 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a pan and sauté onions until translucent.
  3. Add garlic and ground beef. Cook until browned.
  4. Stir in taco seasoning and salt. Remove from heat.
  5. Spread 1/2 cup enchilada sauce on the bottom of a baking dish.
  6. Fill tortillas with beef mixture and cheese. Roll and place seam-side down in the dish.
  7. Pour remaining sauce over enchiladas and top with remaining cheese.
  8. Bake for 20 minutes until bubbly.
  9. Garnish with cilantro before serving.

  • Use corn tortillas for a gluten-free option.
  • Let enchiladas rest for 5 minutes before serving.
