2 lbs beef chuck roast
1 lb beef shank
4 dried guajillo chiles
2 dried ancho chiles
1 onion, chopped
4 cloves garlic, minced
2 tsp ground cumin
1 tsp dried oregano
4 cups beef broth
Salt and pepper to taste
12 corn tortillas
Chopped cilantro for garnish
Chopped onions for garnish
Instructions
In a pot, boil the dried chiles until softened, then blend with garlic, onion, cumin, oregano, and a bit of beef broth until smooth.
In a large pot, sear the beef chuck roast and beef shank until browned on all sides.
Add the blended chile sauce and remaining beef broth to the pot with the meat.
Season with salt and pepper, then cover and simmer for about 3 hours until the meat is tender.
Remove the meat, shred it, and return it to the pot to soak in the broth.
Heat the corn tortillas on a skillet, then fill them with the shredded meat.
Serve with chopped cilantro, onions, and a side of the broth for dipping.
Notes
For extra flavor, marinate the meat overnight in the blended sauce.
Serve with lime wedges for added zest.
These tacos can also be made with lamb or goat for a different taste.
