  • 2 cups black beans, soaked overnight
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Drain and rinse the soaked black beans.
  2. In a large pot, sauté the onion, garlic, and bell pepper until softened.
  3. Add the cumin and chili powder, stirring for 1 minute.
  4. Add the black beans and vegetable broth to the pot.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes until beans are tender.
  6. Use an immersion blender to puree the soup to your desired consistency.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
