Blackened Salmon Tacos

  • 2 tbsp blackening seasoning
  • 1 tbsp olive oil
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1 lime, cut into wedges

Instructions

  1. Season salmon with blackening spice.
  2. Heat oil in a skillet over medium-high heat.
  3. Cook salmon for 3-4 minutes per side.
  4. Flake salmon into pieces.
  5. Warm tortillas in a dry pan.
  6. Assemble tacos with salmon, cabbage, avocado, tomatoes, and cilantro.
  7. Drizzle with sour cream and serve with lime wedges.
