Brown Rice Sushi Bowls

A healthy twist on traditional sushi, these Brown Rice Sushi Bowls are packed with flavor and nutrition.

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, shredded
  • 1/2 cup edamame, shelled
  • 1/4 cup seaweed salad
  • Soy sauce, for serving

Instructions

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool.
  4. Once the rice is cool, assemble the bowls by placing a scoop of rice at the bottom.
  5. Top the rice with sliced avocado, julienned cucumber, shredded carrot, edamame, and seaweed salad.
  6. Drizzle with soy sauce before serving.

Notes

  • Feel free to add your favorite sushi toppings.
  • This dish can be made vegan by omitting any animal products.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
