  • 1/2 cup unsalted butter, chilled and diced

  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1 cup brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or pecans (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Add cold water gradually, mixing until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface and cut into circles to fit a muffin tin.
  5. In another bowl, whisk together brown sugar, corn syrup, melted butter, eggs, and vanilla until smooth.
  6. Place a few raisins or pecans in each pastry shell, then fill with the sugar mixture.
  7. Bake for 20-25 minutes or until the filling is set and the tops are golden.
  8. Let cool before serving.

  • Ensure the butter is cold for a flaky crust.
  • Do not overfill the tarts to prevent spilling.
