  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 2 cups long-grain rice
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage, cooking until browned.
  3. Stir in onion, bell pepper, celery, and garlic; sauté until vegetables are tender.
  4. Add rice, diced tomatoes, chicken broth, Cajun seasoning, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  7. Stir in shrimp and cook for an additional 5 minutes until shrimp are pink and cooked through.
  8. Remove bay leaf and serve hot.
