A delicious and savory galette featuring caramelized onions and feta cheese, served with a fresh arugula salad.

  • 1 pre-made pie crust
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup feta cheese, crumbled
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten (for egg wash)
  • 4 cups arugula
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat and add the sliced onions. Cook until caramelized, about 20-25 minutes.
  3. Roll out the pie crust on a baking sheet and spread the caramelized onions evenly over the crust.
  4. Sprinkle the crumbled feta cheese and thyme leaves over the onions.
  5. Fold the edges of the crust over the filling, creating a rustic border.
  6. Brush the crust with the beaten egg.
  7. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  8. While the galette is baking, toss the arugula with balsamic vinegar, salt, and pepper.
  9. Once the galette is done, let it cool slightly before serving with the arugula salad on the side.

  • Feel free to add other herbs like rosemary or oregano for extra flavor.
  • This dish can be served warm or at room temperature.
