  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 pie crust (top and bottom)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Add onions and cook until translucent.
  3. Stir in flour, salt, pepper, and thyme until well combined.
  4. Gradually add chicken broth and milk, stirring constantly until the mixture thickens.
  5. Add cooked chicken, carrots, peas, and potatoes to the sauce. Mix well.
  6. Pour the chicken mixture into a pie crust in a pie dish.
  7. Cover with the top pie crust, sealing the edges. Cut slits in the top crust to allow steam to escape.
  8. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • For a richer flavor, use homemade chicken broth.
  • You can add other vegetables like corn or green beans.
  • Leftovers can be stored in the refrigerator for up to 3 days.
