  • 1 lb chicken breast, diced
  • 2 cups cauliflower florets
  • 1 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons curry powder
  • 1 can coconut milk (400ml)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
  3. Add the diced chicken and cook until browned.
  4. Stir in the curry powder and cook for another minute.
  5. Add the cauliflower and peas, then pour in the coconut milk.
  6. Bring to a simmer and cook for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro before serving.
