Cottage Cheese Lasagna Stuffed Peppers

  • 4 large bell peppers
  • 2 cups cottage cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together the cottage cheese, marinara sauce, Italian seasoning, garlic powder, salt, and pepper.
  4. Stuff each bell pepper with the cottage cheese mixture.
  5. Place the stuffed peppers in a baking dish and top with shredded mozzarella and grated Parmesan cheese.
  6. Bake in the preheated oven for 30-35 minutes, or until the peppers are tender and the cheese is bubbly.
  7. Let cool for a few minutes before serving.
