Creamy Ricotta and Spinach Stuffed Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Cut a pocket in each chicken breast and stuff with the ricotta and spinach mixture.
  4. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and pour marinara sauce over the top.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  7. Let it rest for a few minutes before serving.
