1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup milk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/4 cup brown sugar
1 tablespoon ground cinnamon (for topping)
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix together the flour, sugar, baking powder, salt, and ground cinnamon.
In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract.
Combine the wet ingredients with the dry ingredients and mix until just combined.
In a small bowl, mix the brown sugar and cinnamon for the topping.
Pour half of the batter into a greased loaf pan, sprinkle half of the cinnamon sugar mixture, then add the remaining batter and top with the rest of the cinnamon sugar.
Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
