Easy Spinach and Ricotta Stuffed Shells

A delicious and easy recipe for stuffed pasta shells filled with spinach and ricotta cheese, perfect for a comforting meal.

  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 jar marinara sauce (about 24 oz)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, chopped spinach, half of the mozzarella cheese, Parmesan cheese, egg, salt, pepper, and Italian seasoning.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Stuff each pasta shell with the ricotta and spinach mixture and place them in the baking dish.
  6. Pour the remaining marinara sauce over the stuffed shells and sprinkle with the remaining mozzarella cheese.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

  • Feel free to add other vegetables like mushrooms or bell peppers to the filling.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier version, add red pepper flakes to the marinara sauce.
