Easy White Chicken Chili

A simple and flavorful white chicken chili recipe that’s easy to make and packed with tender chicken, beans, and spices.

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 2 cups chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup sour cream (optional)
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until no longer pink, about 5-7 minutes. Remove and set aside.
  3. In the same pot, sauté onion until soft, about 3 minutes. Add garlic and cook for 30 seconds.
  4. Stir in beans, green chiles, chicken broth, cumin, oregano, and cayenne pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Return chicken to the pot and simmer for another 5 minutes.
  7. Stir in sour cream (if using) and season with salt and pepper.
  8. Garnish with fresh cilantro before serving.

Notes

  • For extra creaminess, blend half the beans before adding them.
  • Adjust cayenne pepper to control spiciness.
  • Serve with lime wedges and tortilla chips.
