Enchiladas

Enchiladas are a traditional Mexican dish made with rolled tortillas filled with various ingredients and topped with a savory sauce.

  • 12 corn tortillas
  • 2 cups cooked chicken, shredded
  • 1 cup cheese, shredded
  • 2 cups enchilada sauce
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the shredded chicken, cumin, chili powder, and salt. Mix well and cook for 5 minutes.
  4. Warm the corn tortillas in a dry skillet or microwave until pliable.
  5. Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up.
  6. Place the rolled tortillas seam-side down in a baking dish.
  7. Pour the enchilada sauce over the top and sprinkle with remaining cheese.
  8. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving.

Notes

  • For a vegetarian option, substitute chicken with black beans or vegetables.
  • Can be made ahead and stored in the refrigerator before baking.
  • Adjust the spice level by adding more or less chili powder.
