Falafel & Tzatziki Bento Box

A delicious and balanced bento box featuring crispy falafel and creamy tzatziki, perfect for a quick lunch or snack.

Ingredients

  • 1 cup chickpeas, soaked overnight
  • 1 small onion, chopped
  • 2 cloves garlic
  • 1/4 cup fresh parsley, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 2 tbsp flour
  • Oil for frying
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp dill

Instructions

  1. Drain and rinse soaked chickpeas.
  2. Blend chickpeas, onion, garlic, parsley, cumin, coriander, and salt into a coarse mixture.
  3. Mix in flour and form small patties.
  4. Fry falafel in hot oil until golden brown.
  5. For tzatziki, mix Greek yogurt, grated cucumber, lemon juice, olive oil, and dill.
  6. Pack falafel and tzatziki in your bento box.

Notes

  • Bake falafel at 375°F for 20 minutes for a healthier option.
  • Squeeze excess water from cucumber to prevent watery tzatziki.
  • Serve with pita bread or fresh vegetables.
