  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup ricotta cheese
  • 2/3 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp butter, melted

Instructions

  1. Whisk flour, sugar, baking powder, and salt in a bowl.
  2. In another bowl, mix ricotta, milk, eggs, and vanilla.
  3. Combine wet and dry ingredients, then stir in melted butter.
  4. Heat a non-stick pan over medium heat and lightly grease.
  5. Pour 1/4 cup batter per pancake and cook until bubbles form.
  6. Flip and cook the other side until golden.

Notes

  • Do not overmix the batter for fluffier pancakes.
  • Let batter rest for 5 minutes before cooking.
  • Use whole milk ricotta for best texture.
