  • 2 cups gluten-free graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the gluten-free graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth.
  4. Add sugar, eggs, and vanilla extract, mixing until well combined.
  5. Stir in the sour cream until smooth.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.
