Gluten free banana oat bread

A delicious and healthy gluten-free banana oat bread that is easy to make and perfect for breakfast or a snack.

Ingredients

  • 3 ripe bananas
  • 2 cups gluten-free oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the almond milk, honey (or maple syrup), melted coconut oil, and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine the gluten-free oats, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • This bread can be frozen for up to 3 months; just slice and wrap tightly before freezing.
  • Feel free to add nuts or chocolate chips for extra flavor.
