  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking soda, and salt.
  3. Add melted butter, egg, and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Form the dough into small balls and place them on a baking sheet lined with parchment paper.
  5. Flatten each ball slightly with your hand.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
