A deliciously healthy gluten-free matcha cake that is perfect for any occasion.

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 4 large eggs
  • 2 tablespoons matcha powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix the almond flour, coconut flour, matcha powder, baking powder, and salt.
  3. In another bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the cake cool before serving.
