  • 1 cup olive oil
  • 1 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Boil the oranges in water for about 30 minutes until soft, then let them cool.
  3. Once cooled, cut the oranges in half, remove the seeds, and blend them into a puree.
  4. In a mixing bowl, combine the orange puree, olive oil, and sugar, and mix well.
  5. Add the eggs one at a time, mixing well after each addition.
  6. In another bowl, whisk together the almond flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
