  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (dairy-free if desired)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, whisk together honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed.
  5. Fold in the dark chocolate chips.
  6. Pour the batter into a greased baking dish.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Store leftovers in an airtight container for up to 5 days.
  • For a nut-free version, substitute almond flour with sunflower seed flour.
