Greek Lemon Chicken and Rice Bowls

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 2 lemons, juiced
  • 3 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a bowl, combine chicken, lemon juice, garlic, oregano, salt, pepper, and olive oil. Marinate for at least 30 minutes.
  2. In a pot, bring chicken broth to a boil and add rice. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  3. In a skillet, cook the marinated chicken over medium heat until fully cooked, about 7-10 minutes.
  4. Fluff the rice with a fork and mix in chopped parsley.
  5. Serve the chicken over the rice and drizzle with additional lemon juice if desired.
