Ingredients

  • 1 cup quinoa
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 lemon, juiced

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with olive oil, garlic powder, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. While the chicken is grilling, rinse the quinoa under cold water and cook according to package instructions.
  5. Steam the broccoli florets until tender, about 5-7 minutes.
  6. Once everything is cooked, serve the grilled chicken on a bed of quinoa with steamed broccoli on the side.
