  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 lemons (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 pound broccoli florets
  • 1 tablespoon balsamic vinegar

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the chicken is marinating, preheat the oven to 425°F (220°C).
  5. On a baking sheet, toss broccoli florets with olive oil, balsamic vinegar, salt, and pepper. Spread them out in a single layer.
  6. Roast the broccoli in the oven for 20-25 minutes until tender and slightly crispy.
  7. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until fully cooked.
