4 boneless, skinless chicken breasts
1/4 cup olive oil
2 lemons (juiced and zested)
2 cloves garlic (minced)
1 tablespoon fresh rosemary (chopped)
1 tablespoon fresh thyme (chopped)
Salt and pepper to taste
1 pound broccoli florets
1 tablespoon balsamic vinegar
Instructions
In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
Place chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
Preheat the grill to medium-high heat.
While the chicken is marinating, preheat the oven to 425°F (220°C).
On a baking sheet, toss broccoli florets with olive oil, balsamic vinegar, salt, and pepper. Spread them out in a single layer.
Roast the broccoli in the oven for 20-25 minutes until tender and slightly crispy.
