  • 2 teaspoons dried rosemary
  • 4 cloves garlic, minced
  • 1 lemon, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together olive oil, salt, pepper, thyme, rosemary, and minced garlic.
  3. Rub the herb mixture all over the chicken, including under the skin.
  4. Place the lemon halves inside the cavity of the chicken.
  5. Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10-15 minutes before carving.
