Delicious and nutritious high protein banana muffins that provide a great energy boost.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, protein powder, honey or maple syrup, Greek yogurt, and eggs to the mashed bananas and mix well.
  4. In a separate bowl, combine the baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • These muffins can be stored in an airtight container for up to 5 days.
  • Feel free to add nuts or chocolate chips for extra flavor.
  • For a vegan version, substitute eggs with flax eggs and Greek yogurt with a plant-based yogurt.
