1 cup all-purpose flour
2 tablespoons cocoa powder
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1 large egg
2 tablespoons melted butter
1/2 cup mini marshmallows
1/2 cup chocolate chips
Instructions
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, mix the milk, egg, and melted butter until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown.
Once cooked, place a pancake on a plate, sprinkle with mini marshmallows and chocolate chips, and roll it up.
Repeat with remaining batter and filling.
Serve warm with additional chocolate sauce or whipped cream if desired.
Notes
For a richer flavor, use dark cocoa powder.
These pancakes can be made ahead and reheated in the microwave.
