  • 2 sheets of kelp seaweed (nori)
  • 1 cup sushi rice, cooked and cooled
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 avocado, sliced
  • 1/2 cucumber, julienned
  • 1 small carrot, julienned
  • 1/4 red bell pepper, thinly sliced
  • 1 tbsp pickled ginger (optional)

Instructions

  1. Mix rice vinegar, sugar, and salt in a small bowl. Stir until dissolved.
  2. Gently fold the vinegar mixture into the cooked sushi rice.
  3. Place a sheet of kelp seaweed on a bamboo sushi mat.
  4. Spread a thin layer of rice evenly over the seaweed, leaving a small border at the top.
  5. Arrange avocado, cucumber, carrot, and bell pepper in a line across the center.
  6. Roll the sushi tightly using the bamboo mat.
  7. Slice into bite-sized pieces with a sharp knife.
  8. Serve with pickled ginger if desired.
