Keto Butter Chicken with Cauliflower Rice

A low-carb version of classic butter chicken served with cauliflower rice.

Ingredients

  • 500g chicken breast, cubed
  • 2 tbsp butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp chili powder
  • 1/2 cup heavy cream
  • 1 head cauliflower, grated
  • Salt to taste

Instructions

  1. Melt butter in a pan over medium heat.
  2. Add onion, garlic, and ginger. Cook until soft.
  3. Add chicken and cook until browned.
  4. Stir in spices and cook for 1 minute.
  5. Pour in heavy cream and simmer for 10 minutes.
  6. Grate cauliflower and sauté in a separate pan for 5 minutes.
  7. Serve chicken over cauliflower rice.

Notes

  • Use full-fat cream for best results.
  • Adjust spices to your taste.
  • Store leftovers in the fridge for up to 3 days.
