  • 2 cups almond flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup erythritol or preferred sweetener
  • 16 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions

  1. In a mixing bowl, combine almond flour, melted butter, and erythritol to form the crust.
  2. Press the mixture into the bottom of a springform pan and refrigerate for 10 minutes.
  3. In another bowl, beat the softened cream cheese until smooth.
  4. Add the powdered erythritol, vanilla extract, and lemon juice to the cream cheese and mix until well combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  7. Pour the cheesecake filling over the crust and smooth the top.
  8. Refrigerate for at least 4 hours or until set.
  9. Slice and serve chilled, optionally topped with berries or sugar-free chocolate.
