Korean BBQ Tofu Bowls are a delicious and healthy meal option that combines marinated tofu with fresh vegetables and rice, all drizzled with a savory Korean BBQ sauce.

Ingredients

  • 1 block firm tofu, pressed and cubed
  • 1 cup cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup Korean BBQ sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds

Instructions

  1. Press the tofu to remove excess moisture and then cut it into cubes.
  2. In a bowl, mix the Korean BBQ sauce, soy sauce, and sesame oil.
  3. Marinate the tofu cubes in the sauce for at least 30 minutes.
  4. Heat a non-stick skillet over medium heat and add the marinated tofu. Cook until golden brown on all sides.
  5. In the same skillet, add the broccoli, carrots, and bell pepper. Stir-fry until the vegetables are tender.
  6. Serve the cooked rice in bowls, topped with the sautéed vegetables and tofu.
  7. Garnish with green onions and sesame seeds before serving.

Notes

  • For a spicier version, add gochujang (Korean chili paste) to the marinade.
  • This dish can be made vegan by ensuring the BBQ sauce is plant-based.
  • Feel free to substitute any vegetables based on your preference.
