12 lasagna noodles
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 pound ground beef or Italian sausage
2 cups marinara sauce
1 egg
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions; drain and set aside.
In a skillet, cook the ground beef or sausage over medium heat until browned; drain excess fat.
In a bowl, mix ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper.
Spread a thin layer of marinara sauce on the bottom of a baking dish.
Take a lasagna noodle, spread a portion of the cheese mixture on it, and roll it up tightly.
Place the roll-up seam side down in the baking dish. Repeat with remaining noodles.
Pour the remaining marinara sauce over the roll-ups and sprinkle with the remaining mozzarella cheese.
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
Let cool for a few minutes before serving.
Notes
Feel free to add vegetables like spinach or mushrooms to the cheese mixture for added flavor.
These roll-ups can be made ahead of time and stored in the refrigerator before baking.
For a vegetarian option, omit the meat and add more vegetables.
