Lasagna with Bell Peppers

A delicious and colorful twist on traditional lasagna, featuring layers of bell peppers and rich cheese.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, mix ricotta cheese, Italian seasoning, salt, and pepper.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Layer 3 lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles.
  7. Add half of the diced bell peppers and a layer of mozzarella cheese.
  8. Repeat the layers: sauce, noodles, ricotta, bell peppers, and mozzarella.
  9. Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  10. Bake for 30-35 minutes until bubbly and golden.
  11. Let it cool for 10 minutes before serving.

Notes

  • Feel free to add ground meat or other vegetables for extra flavor.
  • Can be made ahead and stored in the refrigerator before baking.
  • For a spicier version, add red pepper flakes to the sauce.
