Ingredients

  • 1 whole chicken (about 45 lbs)
  • 4 cloves garlic, minced
  • 2 lemons, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 carrots, peeled and chopped
  • 3 potatoes, peeled and cubed
  • 1 onion, quartered
  • Fresh herbs (such as rosemary or thyme) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the minced garlic, lemon juice, lemon zest, olive oil, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Place the chicken in a roasting pan and surround it with the chopped root vegetables.
  5. Drizzle any remaining marinade over the vegetables.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving.
  8. Garnish with fresh herbs and serve with the roasted vegetables.

  • For extra flavor, marinate the chicken in the lemon garlic mixture for a few hours or overnight.
