  • 1 cup cream cheese, softened
  • ½ cup sour cream
  • ½ cup fresh lime juice
  • 2 tablespoons lime zest
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, and melted butter to form the crust.
  3. Press the mixture into the bottom of a pie pan and bake for 10 minutes.
  4. In another bowl, beat the cream cheese until smooth.
  5. Add sour cream, lime juice, lime zest, eggs, and vanilla extract, mixing until well combined.
  6. Pour the filling into the baked crust.
  7. Bake for an additional 25-30 minutes until set.
  8. Let it cool, then refrigerate for at least 2 hours before serving.
