  • 2 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon lemon juice

Instructions

  1. In a medium saucepan, combine the chopped strawberries and lemon juice over medium heat.
  2. Cook for about 5-7 minutes, stirring occasionally, until the strawberries start to break down.
  3. Remove from heat and stir in the chia seeds and honey or maple syrup if using.
  4. Let the mixture sit for about 10-15 minutes to thicken.
  5. Transfer the jam to a jar and refrigerate. It will continue to thicken as it cools.
