  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup kalamata olives
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic, oregano, salt, and pepper. Marinate the lamb chops in this mixture for at least 30 minutes.
  3. While the lamb is marinating, prepare the Greek salad by combining cucumber, tomatoes, red onion, feta cheese, and olives in a large bowl.
  4. In a small bowl, whisk together red wine vinegar and lemon juice, then pour over the salad and toss to combine.
  5. Grill the lamb chops for about 4-5 minutes on each side, or until they reach your desired level of doneness.
  6. Remove the lamb chops from the grill and let them rest for a few minutes.
  7. Serve the grilled lamb chops alongside the Greek salad, garnished with fresh parsley.
