Mediterranean quinoa salad

A refreshing and nutritious Mediterranean quinoa salad perfect for lunch or as a side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately or refrigerate for later use.

Notes

  • For a vegan option, omit the feta cheese.
  • This salad can be made a day in advance for better flavor.
  • Feel free to add other vegetables or proteins as desired.
